BLUEBERRY & MINT SIMPLE SYRUPPrint Recipe
- 2 cups white sugar
- 2 cups water
- 1 cup fresh blueberries
- 1 large handful mint, torn
Throw all the ingredients together in a saucepan and place over medium heat just until the mixture boils. Remove from the heat and cool.
Strain the mixture (a colander lined with cheesecloth would work well here) into mason jars and store in the fridge until ready for use.
To make the blueberry mojito, add about two fingers of simple syrup to a small tumbler, a splash of gin, a slice of lime, and a few mint leaves. Muddle, and then top up with sparkling water.
